This is an organic lot from the El Palto Agroecological Producers Association in the Chingama coffee valley, Bellavista district, Jaén, Cajamarca, northern Peru. Third-generation coffee families cultivate and process this coffee at 1,600–1,800 m.a.s.l., focusing on certified, fully traceable specialty quality backed by strong environmental and social commitments. The association was founded in 2007 by 25 smallholders and has grown around a clear vision: to be competitive in certified specialty coffees while improving the quality of life of coffee-growing families through social responsibility, environmental stewardship, equity, and gender inclusion.
Coffee is grown under shade in a traditional high-altitude valley, where slower cherry development supports sweetness and complexity. Farmers follow agroecological practices aimed at long-term soil health and biodiversity, supported by technical assistance from the association. This lot combines Caturra, Bourbon and Catimor from member farms and is processed using a washed method, with selective handpicking at peak ripeness, careful fermentation, thorough washing and controlled drying to ensure a clean, structured cup with high consistency.
